Our olives; It is produced from green olives harvested from olive trees, also known as Manzanilla type. Harvest is done in October. Manzanilla green olives, which are carefully and hand-picked from the branch, are selected one by one, and after the necessary washing processes, thin and dense crevices, which we call scratches, are opened on them without getting too close to the pit. The picking process of the green olives should be done on the day of the picking without waiting. Hatice Teyze’s difference in the taste of Turkish grocery green olives stems from this care in picking and processing.

Since the fruit of the green olive has an acidic structure, the acidity increases with each passing day after it is picked. Prompt processing results in the best quality and most delicious Turkish grocery Manzanilla green olives. Manzanilla scratched green olive is kept in fresh water for 15-20 days after the scratching process and the bitter water is removed by changing the water it is in every day. When it reaches the required taste, lemon and oil are added and packaged in a sterile environment and offered for sale.
